With back to school right round the corner, am all about keeping it simple in the recipes department. This Baingan Bharta is one of our favorite South Asian recipe. Easy, quick to prep and scrumptious, It’s made by roasting eggplants until very soft. The skin is removed and the flesh is cooked with tomatoes, peppers, onions, garlic, and spices. A delicious roasted eggplant dish, that is simple and doesn’t use too many spices, salt or oil – perfect for family meals!
