Aesthetics can influence the palate. I recently holidayed in London, England, where I lunched in the opulent Arts & Crafts café of the Victoria & Albert Museum. The stained glass windows made the steak-and-ale pie taste better.
Diwan’s surroundings produce a similar effect. Its chef is Pat Riley, who once wowed Torontonians with his culinary showmanship at the erstwhile Perigee. Here, he and chef de cuisine Walid El-Tawel have an even more ambitious mandate: Tackling the cuisines of the Muslim world, 28 countries’ worth, like a Claudia Roden cookbook come to life.
